Slice of Life Day 19: Chipotle Tahini Bowls

I found a new yummy recipe that I wanted to share with you – Chipotle Tahini Bowls from Pinch of Yum! I’ll be honest, this was a little more involved than what I typically would make for a weekday meal, but it was super tasty. What I love is that this bowl focuses more on the sauce than all the pieces, which means you can build your bowl any way you want. And the chipotle tahini sauce is so good. It’s creamy, spicy, and sweet all at the same time!

So for our chipotle tahini bowls, I started with couscous. I thought we had quinoa, but we didn’t so I subbed in couscous. I hard-boiled eggs, I followed the recipe to roast the sweet potatoes and sautéd the kale in coconut oil. This recipe took a lot of pots and pans for all the different parts, but I would definitely make it again, probably when I have a little more time in the kitchen! We also added some shredded raw carrots that I had in the fridge. The flavors blended so well together and it was so flavorful!
